I have been really trying to be creative in the kitchen. I was so tired of eating what felt like the same thing every week. I was searching for recipe blogs a few weeks ago and came across Kalyn's Kitchen. Kalyn offers a multitude of South Beach Diet friendly recipes and posts most of them with nutritional breakdown and pictures of what your progress should look like along the way. I have found her site to be a wonderful resource particularly for preparing veggies in a variety of ways because as we all know, veggies can get a bit boring from time to time!
The latest recipe I have attempted from Kalyn's Kitchen turned into nothing more than heaven on a plate. Her recipe for Southwest stuffed Peppers is going to surely go in my cookbook under "favorites". I modified the recipe slightly to match what mine and Chris' needs a bit better.
Chris isn't a huge fan of tomatoes, and I try to follow the general guideline of no more than one dish with red sauce per week. To that extent, he isn't a fan at all of canned diced tomatoes unless in a chili. So, instead of using one whole can of tomatoes and 1 whole can of chilies I got 1 can of the combined chilies and tomatoes and added a small can of sweet corn to make up the difference. I also reduced the rice to about 1 cup instead of 2 to cut back just slightly more on the carbohydrate content. Top warm peppers with a 2T dollop of sour cream and enjoy. YUMMMMMMM!
This recipe was quick, prepared and on the table within an hour and the flavor was out of this world. If you like southwest flavored anything I would suggest this recipe. Based on the ingredients and consistency of the meat mixture I think it would also be good with ground turkey or even chicken. This would also make a nice soup.
