My favorite Turkey Leftover Recipe

I was pregnant with Reis last Thanksgiving. And if you have been pregnant before (or know someone who has been) then you know that food cravings can come in a lot of different ways... including creative inventions in the kitchen...

I love grilled sandwiches... panini, quesedilla, grilled cheese, you name it. They are flavorful, quick and can be made with just about anyhting as long as you have a layer of "sticky" to hold it together (read: cheese :) ) LAst year while trying to figure out what do to with my turkey dinner leftovers I threw together a quick panini what everyone ion the family wound up loving. So, if you are still looking for what do to with your leftovers try this out!

Super Turkey Panini at Home

2 slices of Pepperidge Farm Sour Dough bread
Mayo
Butter or Margarine (for grilling)
Leftover turkey
LEftover cranberry sauce
Leftover stuffing
Mozzarella cheese
Brick or other heavy item if you do not have a panini grill

Heat the panini grill or skillet. Spread a very thin layer of butter on one side of each of the pieces of bread. Spread another very thin layer of mayo on the other side of each piece. Layer the cheese, a small amount of cranberry sauce, small amount of stuffing and lots of turkey on a slice of bread. Top with remaining slice. Place on the panini grill and cook until heated trough and golden on both sides. About 3-5 minutes.

If using a skillet, follow the same instructions, except place the sandwich (like you would a grilled cheese) in the skillet and weight it down with the brick and a cover.
