I have found a fabuloso breakfast casserole recipe. Normally I dislike breakfast casserole.... anything that contains baked eggs grosses me out. However, I am really focusing on eating more nutritious and whole foods and trying to cut out refined carbohydrates and refined sugars. So, while surfing the web for recipes, I stumbled onto this broccoli and cheese casserole. I made it tonight and it is DELISH! I made one modification, instead of using the eggs I used a 16oz container of egg mates and 4 whole eggs, and instead of the milk or half and half I used just a few dashes of water.
I am going to cut this casserole into serving sizes, store in zip lock baggies and grab one on my way out the door on the way to work. Low in fat and high in protein, it will make a great start to a healthy day!
As a modification for those who are not following a low refined carbs diet, sandwiching a slice of this between a toasted english muffin would be delicious and quick as well.
